We make sure that pickers understand the difference between the many different levels of ripeness coffee beans may manifest.

We educate them in order to pick perfection. Sometimes coffee beans appear to have reached a perfect level of ripeness; however once the bean is cut, one can clearly see that it has not. These beans need to be separated and processed separately.

However many times Mother Nature makes this process a little bit harder. Coffee shrubs may have had different flowerings, which translate into coffee beans at different levels of maturity at the same time. Some times it becomes impossible for pickers to harvest only the beans that have already reached optimal level of ripeness.

We educate pickers to separate coffee beans accordingly in regards to the level of ripeness, in order for us to be able to process them separately.
