Quality comes from the field. It is very important to acknowledge the fact that the only thing coffee processing mills can do to coffee is either maintain its inert quality or lower it. Every single process previous to harvesting may have been performed to perfection in order to produce excellent quality coffee beans; however, all of those efforts may become purposeless if harvesting is conducted incorrectly.

Coffee beans need to reach an optimal level of ripeness in order to provide its widest range of cup qualities and characteristics. If coffee beans are not aloud to reach this optimal level of ripeness, the same coffee beans that possess the potential to provide a superb cup, may limit itself to something good or mediocre.

In addition, in many cases the level of ripeness at which coffee beans are harvested may even create cup defects. For all these reasons, we are extremely meticulous during the process of harvesting.
