In order to ascertain that the optimal level of ripeness is in fact being harvested, and that coffee beans with different levels of ripeness are not being mixed with one another, we have implemented a screening process.

This process consists of a screening box, in which every single coffee bean is deposited and inspected by a field supervisor. Supervisors make sure that coffee beans meet our requirements. If for some reason a picker does not meet our ripeness and separation requirements, he or she is asked to separate the beans accordingly.

In order to accomplish this level of consciousness, we conduct cupping seminars with most of those involved, in order to prove to them how the level of ripeness may influence the final product.

With pickers however we have been able to convince them through an increase in their income and with constant scrutiny through screening.
