Flavors of a heavy and harsh taste characteristic like coffees grown in the Rio district of Brazil and sometimes present even in fancy mild coffee.
- Riory
- Hard:
A term generally applied to some high grown mild coffees which have a relatively long maturity period on the tree. Similar to Rio or chemical.
- Medicinal
- Chemically:
This odor descriptor is reminiscent of chemicals, medicines and the smell of hospitals. This term is used to describe coffees having aromas such as Rio flavor, chemical taint.
- Tainted
- Baggy:
An off-taste present in cups that have been unsuitably stored for a long time in poor quality jute or burlap.
- Oily:
Similar to baggy, but having a specific petroleum taste. This most often comes from improperly treated bags.
- Musty:
Close to moldy or the smell of mildew. This is often a result of poor drying facilities.
- Moldy
- Peanutty:
Tastes like peanuts, and in the rough category. This can be a result of poor varietals character or the blending of lower grown coffee.
- Dirty:
An unclean or dirty taste that dominates the coffee flavor backgroung.
